JOB TITLE: RESTAURANT MANAGER

DEPARTMENT: MANAGEMENT

RESPONSIBLE TO : GENERAL MANAGER

RESPONSIBLE FOR: ALL FOOD AND BEVERAGE STAFF

OVERALL PURPOSE OF JOB:
To ensure that the food and beverage departments operate to the agreed standards whilst maintaining the highest levels of customer satisfaction and achieving / bettering the budgeted sales and profits

ACCOUNTABILITIES

1. To manage and motivate staff, leading by example and of exemplary behaviour, in a firm but fair manner, and to present themselves for duty on time in a clean and presentable appearance.

2. To operate an efficient, clean and tidy operation, maintaining adequate stocks to service the
requirements of the hotel.

3. To ensure that the cellar is correctly maintained and to assist with the relevant records and paperwork to ensure accurate stocktakes in line with budgeted figures.

4. To ensure there is sufficient levels of glassware, cutlery and crockery to meet the levels of
business and that all equipment is kept in good working order. To carry out regular stocktakes
so that breakages can be monitored.

5. To set standards of performance and give the appropriate training to the staff so that the hotel’s standards are maintained and developed to give greater service and customer satisfaction.

6. To establish a healthy working relationship with the Head Chef, ensuring good communication
levels so that efficient food service is maintained and there is an effective and positive relationship
between the front of house and the back of house staff.

7. To maximise sales in all areas at every opportunity and to control expenses in line with budgeted figures, of course trying to better these figures.

8. Deal with customer complaints immediately and take necessary remedial action and inform the General/Deputy Manager of the outcome of the complaint.

9. To ensure the key tasks set out by the General Manager from time to time are carried out.

10.To pay particular attention to the following ensuring that the correct procedures are carried out at
all times :- Health and Safety regulations, Hygiene and Fire regulations.

11. To make sure all guests, residents and non-residents, feel welcome and receive service that is both relaxed and efficient so that maximum customer satisfaction is achieved and the hotel’s customer base continues to grow.

12. To ensure that all legislation, laws and customs excise regulations which are in forced are strictly adhered to at all times and maintaining tight security of all hotel areas.

13. To establish an effective and efficient working relationship between front of house and food and
beverage departments with strong communication links.

14. To perform Duty Management as required and to carry out any other duties requested from time to time.
